Gluten Free Pizza

If you are like me, pizza may be one of the items you miss being gluten or wheat free.  Great news, Udi’s has a wonderful frozen pizza crust.  They come in a 2 pack and are great for a quick weeknight meal.  I also have a homemade quick pizza crust I will post next week but this is a simple sustainable option.

My secret step is to brush on garlic and olive oil first, then spoon organic tomato sauce over the top and season with oregeno, parsley and basil.  I usually will saute up onions and mushrooms and put those on top.  I also add nitrate free pepperoni and fresh basil leaves on top, who needs cheese?  Another family favorite is the baked potato pizza, I slice and saute thin potato slices and layer those on top of the olive oil crust with bacon and then you can put your choice of cheese on it if you choose.
