So I am always looking for ways to incorporate raw veggies into my diet and help my clients do the same. My local thai haunt serves up these spring rolls and they are so yummy! I found a few different versions for a dipping sauce and I prefer a fish based sauce but am still searching for that, will update my postings when I do but in the meantime this sauce was quick, easy and full of protein and flavor. Feel free to roll up whatever veggies you have that are fresh and include shrimp or cooked chicken, beef or pork if you choose. They are wonderfully quick and easy to prepare and much healthier than the deep fried kind..Enjoy!
Fresh Thai Spring Rolls
Rice Spring Roll Wrappers-Found mine at the local coop
Thin slices of zucchini, cucumber, carrot, squash, peppers, rice noodles, mushrooms, bean sprouts, sliced tofu..whatever you like!
Fresh mint leaves, rinsed and dried
Fresh cilantro, rinsed and dried
Put super hot water in a flat pan for softening the rice rolls. Immerse them one at a time into the hot hot water until they feel like they are going to fall apart. Place on working surface and place your ingredients towards one corner, add several leaves of each herb and wrap like a present..they are some good videos on the web for this. These can be refrigerated and make a quick and easy lunch on the go.
Sauce:
- Whisk together
- 2 tablespoons minced fresh ginger
- 1/4 cup hot water
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 4 tablespoons rice or apple cider vinegar
These are super fun for the whole family to collaborate on so have fun and enjoy!
