I was inspired today to share my favorite beet recipe for the Obamas. She was a guest on Live with Kelly about her new healthy eating book. Apparently beets are a no no at the white house. Most of my friends and family thought they didn’t like beets either until they tried these.
Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support. Beets lose Betalains the longer they are cooked so this recipe is perfect for a quick cooking in other 30 minutes!
1/4 cup olive oil
3/4 red onion
4 Beets, raw, peeled and cubed into 1/4 dice for quick cooking
Heat oil in pan, add onions and saute for 2-3 minutes, then add beets. Cook until onion is slightly brown about 8 minutes. Add 1/2 cup water and boil until thick, about 3-4 minutes. Then add:
1/2 cup red wine vinegar
3 Tablespoons raisins
1.5 Tablespoon honey
2 Teaspoons fresh grated ginger
Season with salt and pepper, cook just until beets are fork tender. You can make this ahead and store in fridge! This is a great topping for chicken or pork, reminiscent of a chutney.
